This is the art of selecting the wine that will best suit and enhance different meals.
Some of the North American wine labels say that is not true, as the French indicate, that certain meals are taken with white wines, and others with red wines. And they add, the wine in this bottle can be taken with any meal -if the combination suits your taste. This statement is only partially correct. If, for example, the diner likes meat, and he prefers white wines forgetting all rules, there is no question that he should opt for satisfying his palate. However this is, of course, a very special case. Nonetheless, over time the experience of numerous "gourmets" has shown that when certain dishes are served with certain wines, the resulting combination enhances them, making them more tasty.
